White Teas:

2 tsp (3g) tea per cup of water

  • 149º-167ºF (65º-75º C)
  • 5-7 minutes of infusion
  • white teas should be infused in a smaller amount of water to extract all subtle flavors

Yellow Teas:

1.5 tsp (3g) tea per cup of water

  • 167º-185ºF (75º-85ºC)
  • 4-5 minutes of infusion

Green Teas:

1 tsp (2.5g) tea per cup of water

  • 167º-185ºF (75º-85ºC)
  • 3-5 minutes of infusion

Sencha Green Tea:

1 tsp (2.5g) tea per cup of water

  • 140º-167ºF (60º-75ºC)
  • 3-4 minutes of infusion

Oolong Teas:

2 tsp (3g) tea per cup of water

  • 203ºF (95ºC)
  • 4-5 minutes of infusion
  • rinse tea first so they can unfurl easier

Black Teas:

1 tsp (2.5g) tea per cup of water

  • 203ºF (95ºC)
  • 3-4 minutes of infusion
  • darjeeling first flush teas – lower temperature to 194ºF (90ºC)
  • if leaves are broken or crushed, shorten infusion time

Pu-erh:


1 tsp (2.5g) tea per cup of water

  • 194º-203ºF (90º-95ºC)
  • 3-5 minutes of infusion
  • *rinse for 5 seconds before infusing

10+ years old:
2 tsp (3g) tea per cup of water

  • 203ºF (95ºC)
  • 4-6 minutes of infusion
  • rinse twice for 5 seconds before infusing

Herbal Infusions:

1.5 tsp (3g) tea per cup of water

  • 208ºF (98ºC)
  • 3-8 minutes of infusion
  • when making an iced infusion, double the tea amount per cup
